Skordari or Skorostoumpi

Ingredients: garlic, water, vinegar, salt, oil, bread crumbs optional. Mash the garlic and mix it in a pot with water, vinegar, oil and salt. Set the proportions according to your taste. This will make a lovely refreshing drink during the summer months. The harvesters of the old times-fields added breadcrumbs too, to make it filling at the same time and fulfill their hunger.

Pesto with mashed grilled garlic

Mash lightly grilled cloves of garlic and mix with olive oil and lots of basil. It can also be the perfect pesto for your pasta as well! Wonderful sauce for sandwiches, canapés, tapas and salads. Depending on your preferences we add different herbs, such as mint, dill, fennel etc.

Skordalia (greek traditional salad)

200 gr. of stale bread , 1 cup of nuts, 6 tablespoons of olive oil , 4 tablespoons of vinegar, 3 garlic cloves (finely chopped), half a teaspoon of salt. Soak bread for 10 minutes in a bowl of water, then squeeze gently to drain the water. Add the remaining ingredients and mash well until you get a fine “skordalia”. Put it in the fridge until it gets cool. It can be served with fish (grilled or fried) and vegetables. It traditionally accompanies cod, but beets too.

Sundried tomato paste salad with boiled eggs

Boil the eggs. Add salt, pepper and a little olive oil. Add sundried tomato paste over eggs. Follow these three simple steps and enjoy this great delicacy!

Salad with grilled garlic cloves and grilled vegetables

Bake vegetables of your choice on the grill. Add a bit of salt and olive oil. The grilled cloves of garlic while crispy and without any strong taste of garlic, will give a brilliant sweet taste!
